Zibibbo IGT - Faun

Il Fauno interprets the wildest soul of Pantelleria, it is a white wine produced 100% with Zibibbo grapes grown on saplings from the island of Pantelleria. The grapes are selected to ensure a very high state of health, and fermentation occurs with the action of only indigenous yeasts and without the aid of added sulphites. The refinement takes place in stainless steel tanks and for several months periodic batonnage operations are carried out to put the fine lees back into suspension. The wine is finally racked and bottled without any filtration. The batonnage gives the Fauno a powerful and rounded body, rich in secondary aromas, capable of surprising even years after bottling with a continuous evolution even in the bottle.
